Ingredients

1 tbsp olive oil
- ½ red onion, diced
- 2 links chorizo
- 2 tortillas
- 1 tbsp butter
- 2 eggs
Toppings
- Black beans
- Sliced radish
- sliced avocado
- Cilantro
- pickled onions, diced
- Salt and pepper
- Cloud23 Sweet Jalapeño Hot Sauce
Directions
Preheat a saute pan over medium heat. Add the olive oil, then the diced onion, cooking for about three minutes until soft and translucent. Add the chorizo links, using a wooden spoon to break into smaller pieces while they cook. Remove from the pan and set aside, leaving the oil from the chorizo in the pan.
- Add the butter to the pan and let melt fully. Add the two eggs and fry to your desired level of crispiness. Wipe out the pan, increase the heat to medium high, and warm the tortillas for 15 seconds on each side.
- Assemble the tacos. Add the chorizo and eggs, as well as the remaining toppings including the Cloud23 Sweet Jalapeño Hot Sauce. Enjoy!
